Mommy's best Cupcakes

Today my little pumpkin and I made the best red velvet cupcakes. It's kind of funny though, she hates chocolate! Such a silly little girl. One day she will see what has been missing. 

Luckily my little boy LOVES his chocolate. He actually kept stealing the cupcakes every time I would go nurse baby girl. I wanted to share what I do when I make cakes and even breads. I have this disorder where I can't follow the directions.  At least that's what the husband calls it. My opinion is that my changes make everything better. I hope you feel the same!

 I also let pumpkin take some photos. She did really well at that also.

Best Cupcakes Ever

3 large eggs
2/3 cups milk
1/4 cup oil or melted butter
1 package instant pudding
1 box Duncan Hines mix

If you are making the frosting you can do so according to the package, or use milk in place of the water.

You can see here I did NOT follow the directions completely. Trust me.

Her first time cracking eggs. It didn't turn out too badly.

Just follow the box directions, using the substitutions I gave you and you are golden.

Mix you Milk, and eggs, and oil.
Add your cake mix and pudding mix..

Fill your cupcake pan with your mix.

 Frost your cupcakes as you please.

Homemade baby cereal

As you know, I have 3 kids. I have made baby food in the past but never cereal. I dislike those box brands. So I'm making my own. I figured we would start with this. It has worked in the past. My son was 8 months when he wanted solids and by then the only purée he had was cereal.
Do what works for your baby.

Brown rice cereal

1/2 cup finely ground brown rice
2 cups water
Some breast milk or formula

Simmer about 10 minutes. Add breastmilk to get your desired consistency. All done. Freeze the extra in ice cube tray and then store in freezer bag up to 3 months.

Egg bake

This recipe can easily be changed to suite your needs. You can add mushrooms, onions, peppers. Etc.
I usually make this once a week.

Egg Bake

6 large eggs
2 cups milk
1 cup bisquick or pancake mix
1 cup cheddar cheese
2 cups baby spinach. ( honestly I do it by the handful)
1 cup chopped tomato
2 cups chopped sausage or ham (more or less depending on how much meat you want)
1/2 tsp nutmeg ( trust me you'll miss it)
Dash of salt and pepper
( I also add onion and garlic powder to taste. The choice of spice or not is there. )

Pre heat oven to 350. Grease 2 qt casserole dish.

  1. In a medium-large bowl wisk eggs add milk and Bisquick. Mix. 
  2. Add your spices and cheese. And mix. 
  3. Mix in sausage and meat. Add spinach.
  4. Pour into your baking dish. 
  5. Cook on 350 for about 45 minutes. 
  6. Let cool and cut.
